Key Enzyme Roles: The Basics

Most major food components require a specific enzyme for proper digestion:

  • Amylase breaks down complex carbohydrates and starches into simple sugars. (bread, potatoes, pasta)
  • Protease (including Pepsin, Trypsin) breaks down proteins into amino acids.  (meat, eggs, beans)
  • Lipase breaks down fats and oils into fatty acids and glycerol. (dairy, oils, fatty meats)
